Healthy Recipe: Claypot Fish

This healthy & tasty recipe takes only 20-30 minutes to make!

It is great to finally see some restaurants taking a proactive approach to providing healthier options to those looking to stay on track while dining out. Thanks to the Northside Social in Indy!
6-8 oz Whitefish filet of choice (Basa, Tilapia, Snapper are great choices)
1 Tbs. Extra Virgin Olive Oil
1 Tbs. White Wine
6 Oven dried tomatoes (you can substitute sun-dried packed in oil)
1 Lemon Wedge
8 Kalamata Olives, pitted
1 Thyme Sprig
1 Tsp. Butter or Butter-Substitute
1/4 Tsp. Salt
1/4 Tsp. Pepper
In the baking dish, drizzle in Olive Oil and White Wine. Place the fish filet into the dish and squeeze the lemon wedge over the fish. Leave the wedge in the baking dish. Place tomatoes and olives around the side of the dish. Place teaspoon of butter on the top of the filet, dust with salt and pepper and lay the sprig of fresh thyme on the top.  Cover with foil, bake for 20-25 minutes in a 350 degree oven and then serve.
