Recipe: Gourmet Scramble

There is a prevalent myth that it is expensive to eat healthy…that is just not true. The problem is that people think “eating healthy” means that they have to go to a specialty food store, drop a ton of money on exotic foods shipped over from an exotic island in the South Pacific or get hand-ground spices from happy, small-town farmers in a remote Chinese province…wrong!  Everything you need to eat clean and get lean is right at your local grocery store. Here is a dish that I make all the time. I then use the leftover portions for my next meal, the next day for breakfast, lunch or even dinner. It can be eaten whenever!

  • 18 pack of Large Eggs
  • Teaspoon Minced Garlic
  • 1/2 small chopped Red Onion
  • 3 TBS Olive Oil
  • 2-3 cups Baby Bella Mushrooms (or any mushroom of your choice)
  • 1/4 cup of Mild Cheddar Cheese (This is for taste not for you to make a gooey mess of an egg scramble!)
  • Dash of Black Pepper and Sea Salt
  1. In a large bowl, add 18 egg whites and 3 yolks. Yes, separate the egg whites, put them in the bowl, toss in 3 whole eggs, toss the other yolks, use them in your garden or throw them at your enemies!
  2. In a large, non-stick frying pan; add the olive oil, minced garlic, red onion and mushrooms and cook over Medium High Heat until the mushrooms and onions reduce.
  3. Add the eggs to the pan and cook until firm. Once firm, sprinkle on the Cheese, Black Pepper and Sea Salt, cook until it is melted and blended, remove from heat and serve!
I usually have a plate of this with some plain oatmeal or if I am not wanting oats, a Lundberg whole grain, unsalted Brown Rice Cake. Sounds plain huh? Well, it is but it tastes great with this dish! So before your scrunch your face and say how bad this sounds….just ask yourself how well eating sugary cereals, french toast & syrup or god knows what else has been working for you? This dish tastes great any time of the day, try it!  Use this recipe  and other healthy dishes such as this to support consistent physical activity and you will be well on your way. Eating right and exercise are ONE system, so pay close attention to both!
